Ingredients
- 7 eggs
- 3 tablespoons oat flour
- 1 teaspoon salt
- Half a cup of milk
- 1 zucchini, diced
- 1 grated carrot
- 1 red bell pepper, diced
- 1 tomato, diced
- Pepper to taste
- Chopped parsley to taste
- Grated cheese
Preparation Method
- In a bowl, mix the eggs, milk, and oat flour. Season with salt and pepper.
- Add all the vegetables – zucchini, carrot, red bell pepper, and tomato – to the mixture and stir. Add chopped parsley.
- Pour the mixture into two Lisbon baking dishes lined with parchment paper and sprinkle with grated cheese.
- Bake in the oven at 185ºC for 35 to 45 minutes.
